- 2 peppers, chopped
- 1 courgette, sliced
- 1 red onion, cut into wedges
- 200g baby potatoes, halved
- 3 tbsp olive oil
- 1 tsp paprika
- 1 tsp dried oregano
- Salt and black pepper, to taste

1. Preheat the Oven Preheat your oven to 200°C (180°C fan). This ensures even cooking and helps vegetables roast rather than steam.
2. Prepare the Ingredients Wash and chop all vegetables into evenly sized pieces. Slice the chicken into strips or cubes so it cooks at the same rate as the vegetables.
3. Arrange on a Baking Tray Place all ingredients onto a large baking tray or oven dish. Spread everything out in a single layer to allow proper roasting.
4. Season and Mix Drizzle with olive oil, then add paprika, oregano, salt, and pepper. Toss everything together directly on the tray to coat evenly.
5. Roast in the Oven Cook for 30–40 minutes, turning halfway through. The chicken should be fully cooked, and the vegetables tender with slightly crisp edges.
6. Check and Serve Ensure the chicken is cooked through (no pink inside). Serve immediately while hot.
