Spiced pumpkin biscuits Caramel apple tartlets Chestnut and chocolate truffles Maple and pecan crumble bars Cinnamon and pear scones Spiced pumpkin biscuits Ingredients 200g plain flour 100g unsalted butter, chilled and cubed 80g caster sugar 100g pumpkin puree 1 tsp ground cinnamon 1/2 tsp ground nutmeg 1/4 tsp ground cloves 1/4 tsp ground ginger 1 tsp baking powder A pinch of salt Instructions Preheat the oven to 180°C and line a baking tray with parchment paper. In a bowl, mix the flour, baking powder, salt, and spices. Rub in the butter until the mixture resembles breadcrumbs. Stir in the sugar. Add the pumpkin puree and mix until a dough forms. Roll out the dough on a floured surface and cut into desired shapes. Place on the baking tray and bake for 12-15 minutes or until golden. Allow to cool on a wire rack. Caramel apple tartlets Ingredients 1 roll of ready-made shortcrust pastry 3 medium apples, peeled, cored, and thinly sliced 100g caster sugar 50g unsalted butter 2 tbsp double cream Instructions Preheat the oven to 180°C. Roll out the pastry and cut it into rounds. Press into tartlet tins. Arrange apple slices in the tartlet cases. In a saucepan, melt the sugar and butter until caramelised. Stir in the double cream. Pour the caramel over the apple slices. Bake for 20-25 minutes or until the pastry is golden. Allow to cool before serving. Chestnut and chocolate truffles Ingredients 200g dark chocolate, broken into pieces 100g chestnut puree 50g unsalted butter 2 tbsp double cream Cocoa powder, for dusting Instructions Melt the chocolate and butter in a heatproof bowl over a pan of simmering water. Stir in the chestnut puree and double cream until smooth. Chill the mixture for 2 hours or until firm. Roll into small balls and dust with cocoa powder. Store in the refrigerator. Maple and pecan crumble bars Ingredients 200g plain flour 100g unsalted butter, chilled and cubed 100g caster sugar 100g pecans, chopped 3 tbsp maple syrup Instructions Preheat the oven to 180°C and line a baking tin with parchment paper. In a bowl, mix the flour and sugar. Rub in the butter until the mixture resembles breadcrumbs. Stir in the chopped pecans. Press half of the mixture into the tin. Drizzle with maple syrup. Sprinkle the remaining mixture on top. Bake for 25-30 minutes or until golden. Allow to cool before cutting into bars. Cinnamon and pear scones Ingredients 500g self-raising flour 100g unsalted butter, chilled and cubed 50g caster sugar 2 ripe pears, peeled, cored, and diced 1 tsp ground cinnamon 250ml milk 1 egg, beaten (for glazing) Instructions Preheat the oven to 220°C and line a baking tray with parchment paper. In a bowl, mix the flour and cinnamon. Rub in the butter until the mixture resembles breadcrumbs. Stir in the sugar and diced pears. Gradually add the milk and mix to form a soft dough. Turn out onto a floured surface and knead lightly. Roll out and cut into rounds. Place on the baking tray, brush with beaten egg, and bake for 12-15 minutes or until risen and golden.
